Lakadong turmeric from the hills of Northeast India — hand-dug on slopes too steep for machinery, then ground and jarred in Guwahati.
Most turmeric on an Indian shelf clears a legal minimum and stops there. India's food safety standards set a floor of 2.0% curcumin, the compound responsible for the colour, the bitterness, and the reason anyone cooks with turmeric at all. A powder can meet that floor, sit legally on a shelf, and still be mostly filler. The other lever is starch — turmeric can be bulked with rice flour or maize starch and still look approximately correct. And when the colour fades, because filler has no colour, dye goes in.
We did not want to make a marketing claim about purity. We wanted a government lab to make it for us.

- Total starch — 45.44% (limit: not more than 60%)
- Moisture — 9.45% (limit: not more than 10.0%)
- Total ash — 5.62% (limit: not more than 9.0%)
- Ash insoluble in dilute HCl — 0.31% (limit: not more than 1.5%)
Nearly five times the curcumin the law asks for, and nothing added to make it look that way.

Using it
Deep colour and a full, slightly bitter aroma. Use where turmeric is meant to be tasted rather than merely seen — in dal, in a slow curry base, or stirred into warm milk with a crack of black pepper. Start with less than you are used to.
